What Are Olive Polyphenols?

Polyphenols are naturally occurring plant compounds found in genuine extra virgin olive oil.

Their concentration varies enormously according to:

  • olive variety
  • the age and condition of the fruit
  • when the olives are harvested
  • extraction temperature
  • exposure to air, light and heat
  • filtration and storage
  • the time elapsed since production

Careful harvesting and extraction help retain these delicate compounds.

Wise Tree’s analysed level of 328 mg/kg places it firmly within the premium polyphenol range while retaining a balanced flavour suitable for everyday enjoyment.

Oleocanthal: The Peppery Sign of Freshness

Our oil contains 115 mg/kg of oleocanthal, one of its most noteworthy analytical results.

Oleocanthal is a naturally occurring phenolic compound associated with the characteristic peppery or warming sensation experienced at the back of the throat when tasting a fresh, high-quality extra virgin olive oil.

That gentle pepperiness is not a defect. It is one of the distinctive characteristics of fresh EVOO containing naturally occurring phenolic compounds.

The World Olive Center for Health notes that oleocanthal and oleacein have important biological activity and have been studied in connection with antioxidant, anti-inflammatory, cardioprotective and neuroprotective activity. These observations relate to scientific research into the compounds and should not be interpreted as a claim that olive oil prevents or treats any medical condition.

Hydroxytyrosol and Tyrosol Derivatives

Hydroxytyrosol and tyrosol derivatives are among the principal phenolic compounds to be considered 

When determining whether an olive oil qualifies for the authorised olive oil polyphenol health claim, the regulatory threshold is 5mg of hydroxytyrosol and its derivatives per 20g of olive oil.

Wise Tree Olive Oil contains 6.57mg per 20g serving, exceeding the qualifying threshold by approximately 31%. This allows the authorised claim that “olive oil polyphenols contribute to the protection of blood lipids from oxidative stress”, provided consumers are informed that the beneficial effect is obtained with a daily intake of 20g of the qualifying olive oil.

Independently Confirmed Extra Virgin Quality

Wise Tree’s oil was assessed by the Kalamata Olive Oil Taste Laboratory at the University of the Peloponnese using the International Olive Council testing method.

The results were:

  • Defects: 0.0

  • Fruitiness: 4.1

  • Bitterness: 3.0

  • Pungency: 3.7

The oils with the very highest laboratory polyphenol readings are normally produced from exceptionally green olives harvested extremely early in the season.

This can produce a highly concentrated oil, but there are trade-offs:

  • much less oil is obtained from each kilogram of olives

  • the flavour is substantially more bitter

  • pungency can be intense

  • the finished oil is considerably more expensive

  • it may be less suitable for normal culinary use
